Kristjana Steingríms put together this wonderful protein-rich tiramisu recipe – which is both delicious in taste and beautiful in presentation.
Ingredients (2 servings)
- 1 cup (240ml) whole grain oatmeal/oatmeal
- 4 tbsp chia seeds
- 2 tbsp Feel Iceland collagen powder
- 2 tbsp cocoa powder
- 3 tablespoons honey or maple syrup 1 cup (240 ml) vegetable milk or milk of your choice
- 1/2 cup (120 ml) strong espresso coffee (can be decaffeinated)
- 1 tsp vanilla
- A pinch of salt
The top
- 1 cup (240ml) Greek yogurt
- 2 tbsp Feel Iceland collagen powder
- 3 tbsp honey/maple syrup
- Splash of vanilla
- Cocoa powder for dusting on top
Directions:
- Put the oats, chia seeds, cocoa powder, salt, vanilla, sweetener, milk and coffee in a bowl and stir well and close the bowl
- Leave in the fridge overnight
- For the top; Mix all the ingredients, stir well and put on top.
- Take 2 beautiful glasses, even put a little granola in the bottom
- then the coffee/tiramis pudding / top with the vanilla sauce and at the end strain a little cocoa powder on top
