Super healthy, beautiful and quick energy bars from Kristjana Steingríms (Jana):
* 3 cups coconut
flour * 1 cup almond flour
* 1-2 tbsp Feel Iceland collagen powder
* 1/3 cup liquid coconut oil
* 1/3-1/2 cup liquid sweetener e.g. Acacia honey or maple syrup
* 1/2 – 1 tbsp quality Matcha tea
* 1 tsp vanilla
* A pinch of salt
Put everything together in a bowl and stir well, you can also use a food processor and mix there well. Make small balls and roll in coconut, put in a box and store in the freezer.
You can also simplify and press the dough onto baking paper and freeze, then cut into colored pieces and keep in the freezer. If you want to make the pieces extra beautiful, you can melt white chocolate and spread a little over the pieces before they go into the freezer.
