Healthy and good granola bar from Kristjana Steingríms (Jana):
* 2 cups chopped nuts
* 1/3 cup coconut flour
* 4 tbsp pumpkin seeds
* 2 tbsp hemp seeds
* 1 tbsp collagen from Feel Iceland
* 1/3 cup almond butter
* 1/4 cup acacia honey / maple syrup
* 2 tbsp coconut oil
* A little vanilla
* A little cinnamon
* 100 g quality chocolate (melted over a water bath)
Heat maple syrup, almond butter and coconut oil together in a saucepan over low heat, stir well.
Remove from the heat and let cool slightly.
Then add the rest except the chocolate to the warm mixture.
Then put in a tin with baking paper underneath or as I did in a silicone tin. Press the mixture well into the tin.
Melt the chocolate over a water bath and pour evenly over the bottom.
Cool – slice and enjoy
